Lemon Cake with Lemon Glaze

I had a random craving for lemon poppy seed muffins the other day, but I didn’t have poppy seeds or muffin tins (don’t even ask…). What’s a girl to do? Lemon cake with glaze to the rescue!! I can’t wait to make it again, I have some new things I want to try to it.

Cake Recipe

2/3 cup sugar
zest of two lemons
1 1/2 cup flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 eggs
3/4 cup sour cream
1 tsp. vanilla
1 stick butter, melted and cooled
Juice from 2 lemons

Preheat oven to 350 degrees and grease your pan (I used a standard loaf pan).

In large bowl combine lemon zest and sugar, work them together with your hands (make sure they’re clean)! Once combined, whisk in flour, b. powder, b. soda, and salt. Set aside. In medium bowl, mix eggs, melted butter, sour cream, and vanilla. Pour wet ingredients into dry ingredients and  blend well.

Pour into pan and bake for 30-45 minutes.

Glaze Recipe

1 cup powdered sugar
juice from one lemon
**I had to use a tablespoon water because my lemon wasn’t juicy enough 😦
