Enchilada Pie

I love cookies and cakes, but I’m also pretty good and coming up with tasty dinners! We had Enchilada Pie the other night and it was fantastic! There were many reasons I decided on a “pie” form, but the main reason was my baking dish (13×9) was already holding my Texas Sheet Cake.

Recipe

1 lb ground turkey
1 packet low sodium taco seasoning
1- 10 oz. can red enchilada sauce
1/2 cup sour cream
Shredded cheese, I used a Mexican blend
12 White corn tortillas

Preheat your oven to 400 degrees. Brown ground turkey and add seasoning as the packet suggests.

Lightly grease the bottom of your pie pan (I used a 9″). Cut 8 tortillas in half, this makes it easier to line the pie pan. In medium bowl combine red enchilada sauce and sour cream. Now it’s time to start your layers!

Layer one – tortillas, I used the halves on the outside and one full in the middle
Layer two – enchilada sauce mixture (about 1/4 cup)
Layer three – ground turkey mixture
Layer four – cheese

REPEAT

I had three layers of each, with the final layer being the sauce, meat and EXTRA cheese layer. Bake for 15 minutes or until the top is nice and crispy! The hubs LOVED it, which is always a plus!
